Italian Style Grilled Pork

Ingredients

  • 1/4 c olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic
  • 1 tbsp packed fresh rosemary leaves
  • 2 tbsp packed fresh basil leaves
  • 4 boneless 1" thick pork chops (about 5 oz each)
  • 3 medium-size ripe tomatoes, quartered
  • 3/4 c instant polenta
  • 3/4 tsp salt
  • 2 tbsp heavy cream OR milk
  • 2 tbsp freshly grated Parmesan cheese
  • 3 c water

Preparation

Step 1

Prepare a charcoal grill with hot coals or heat gas grill to HIGH.
Place oil, vinegar, garlic, rosemary, and basil in a food processor.
Pulse until thoroughly blended.
Remove 2 tbsp; set aside.
Place remaining marinade in a plastic food-storage bag; add pork and marinate at room temperature for 10 minutes.
Toss reserved 2 tbsp marinade with tomatoes.
Set aside.
To cook, remove pork from marinade, spray with nonstick cooking spray, and place on grill.
Grill for a total of 15 minutes, turning once, halfway through.
Meanwhile, bring water to a boil.
Slowly add polenta and salt.
Cook, stirring constantly, over medium heat until cooked, about 5 minutes.
Remove from heat.
Stir in cream (or milk) and cheese.
Serve pork with polenta and tomatoes.
