Baked mushroom rice

  • 1 tbl olive oil
  • 1 cup sliced cremini mushrooms
  • 1 cup uncooked rice
  • 11/2 cups fat-free, less-sodium chicken broth



Step 1

1. Preheat oven to 400.
2. Heat oil in a medium non-stick skillet over medium-high heat. Add mushrooms; saute 5 minutes. Stir in rice, broth, and salt; bring to a boil. Wrap handle of skillet in foil; cover and bake at 400 for 20 minutes. Uncover; let stand for 3 minutes.
