Ingredients

  • 1 onion
  • 3 Tbsp. butter, divided
  • 1 cup sour cream, divided
  • 2 1/2 cups chopped cooked chicken or turkey
  • 2 cups shredded cheddar cheese
  • 10 tortillas
  • 1 cup turkey broth
  • 1- 4 oz can green chilies
  • 1/3 cup taco sauce
  • 1/8 tsp chili powder
  • 2 Tbsp. flour

Step 1

melt 1 Tbsp. butter and saute the onion, with 2 Tbsp. peppers together. Add taco sauce, 1/4 cup sour cream and chili powder. Stir in the meat and 1/2 cup cheese. Fill tortillas and put in a 9x13 pan. melt remaining butter, blend in flour and add broth till thick. Stir in remaining sour cream and peppers. Pour white sauce over enchiladas. Top with cheese. Bake at 350 until bubbly.
