Fettuccine with Toasted Pine Nuts

Ingredients
- 3/4 lb. fettuccine
- 6 Tbs. butter
- 1/3 cup pine nuts
- 3 Tbs. chopped scallions
- 3 Tbs. chopped fresh flat parsley
- 1 12/ tsp. salt
- 1/4 tsp. black pepper

Preparation
Step 1
Cook the fettuccine in boiling, salted water until just done, about 12 minutes. Meanwhile, melt the butter in a medium frying pan over moderate heat. Add the pine nuts and cook, stirring occasionally, until lightly browned, about 5 minutes. Add the scallions, parsley, salt and pepper and cook 1 minute longer. Drain the fettuccine and toss it with the pine nut mixture.
