There is a New Mexican Restaurant here that makes a Roast Pork with either Green or Red Chile Sauce over it and I think I have come up with what tastes exactly the same, based in part on the Crock Pot Pig recipe

1 7 lb pork butt
2 tablespoons cumin
8 garlic cloves sliced
2 tablespoons Mexican Oregano
2 tablespoons sea salt
diced Green chilies to taste (i use freshly roasted Hatch chilies, but I'm sure you could sub canned.)

slit holes throughout roast and insert garlic slices
rub the entire roast with cumin, oregano and sea salt
put in crock pot and cook for 10 hrs on low

Take roast out of pot, carefully, it will be falling apart and chunk it up, or shred it up. Can now use it for burritos, or just plain with veggies. I chunked mine up, made some guacamole, and put both in a tortilla.

I will make burritos for left overs by chunking up the meat, putting it in tortillas add some shredded Mexican blend cheese, or Monterey Jack, roll up, Make some green sauce

Green Sauce

1 cup green chilies
chicken broth
pinch of cumin
garlic powder
thickener (your choice)

Then put the thickened green sauce on top of cheese and pork stuffed tortillas, add more cheese on top and put under broiler until cheese is melted and burrito is warm.

If you love Mexican, you can't go wrong with this pork. It could be made into enchiladas, tacos etc. Anything your little heart desires. Yummy
