Lobster Tacos

Ingredients
- 1 1/2 lb. lobster meat cut into thin sclices
- 3 tablespoons oil – corn or Mazola
- 1 cup grated Pepper Jack cheese
- 1 cup shredded fresh spinach leaves
- Mango Salsa recipe
- Jicama Salad recipe
- 6 flour tortillas

Preparation
Step 1
Heat oil in skillet our medium heat. Add lobster meat and sauté until warm. Warm tortillas. Spoon equal portions of lobster meat, sprinkled spinach, and cheese. Roll tacos into cylinder shape. Garnish with mango salsa. Serve with Jicama salad.
