Mandarin Pasta Salad

Ingredients
- DRESSING
- 1 t grated fresh ginger
- 1 garlic clove pressed
- 1/3 C rice vinegar
- 1/4 C orange juice
- 1/4 C vegetable oil
- 1 t sesame oil
- 1 envelope Lipton's onion soup mix
- 2 t sugar
- MAIN SALAD
- 8 oz. bow tie pasta, cooked
- 1/2 cucumber scored, seeded and sliced
- 1/2 C diced red pepper
- 6 oz of fresh spinach leaves
- 1 can drained mandarin oranges
- 2 C of diced cooked chicken
- 1/2 C toasted sliced almonds

Preparation
Step 1
Cook pasta and rinse with cold water and drain. Add a little oil so it doesn't stick together and place in a ziplock or a covered bowl.
Mix all together.
