  • 4 bone in rib chops 1 1/2 inches thick

Step 1

Preheat oven to 275 degrees. Pat chops dry with paper towels. Using sharp knife, cut 2 slits approximately 2 inches apart through outer layer of fat and silver skin. Sprinkle entire surface of each chop with 1 teaspoon salt. Place chops on wire rimmed baking sheet and let stand at room temperature 45 minutes.

Season liberally with pepper and place in preheated oven. Cook until an instant read thermometer reads 120 to 125 degrees. Place immediately on grill and cook until a final temperature of 150 degrees
