Ingredients

  • 2 bags (1 lb. each) fresh spinach
  • 1/8 lb. butter
  • 1 t. minced fresh garlic
  • 2 T. minced onions
  • 1/4 c. flour
  • 1 pt. heavy whipping cream
  • 2 t. fresh squeezed lemon juice
  • 1/2 t. Tabasco sauce
  • 1/2 t. Salt
  • 2/3 c. fresh grated Parmesan cheese
  • 1/3 c. sour cream
  • 1/2 c. grated Monterey Jack cheese
  • Diced artichoke hearts

Preparation

Step 1

Strain spinach must be very dry. Chop finely, set aside. Melt butter add onions and garlic, saute 3-5 min. Add flour. Stir and cook about 1 min, slowly add cream beating with whisk to prevent clumping. When it thickens add lemon juice, Tabasco and salt and Parmesan cheese. Remove from heat and let stand for 5 min. Stir in sour cream and fold in spinach, chopped artichokes, and Jack Cheese. Stir until cheese is melted.
