Ingredients

  • Coconut Kisses
  • 1 c. brown sugar
  • 2 stiff-beaten egg whites
  • 2 cups corn flakes
  • 1 c. moist shredded coconut
  • 1/2 c. chopped walnuts
  • 1/2 tsp. vanilla
  • Beat sugar into egg whites. Fold in corn flakes, coconut, and nuts.
  • Add vanilla.
Drop by teaspoonful onto well greased cookie sheet.
  • Bake in350 F. oven 15 to 20 minutes.
  • Place pan on damp towel; remove cookies immediately with spatula. (If cookies stick to pan, return to oven to soften). Makes 1 1/2 doz kisses
  • Coconut Macaroons
  • 1/2 c. egg whites (4 - 5 egg whites)
  • 1/4 tsp. salt
  • 1 1/4 c. sugar
  • 1/2 tsp. vanilla
  • 1 1/2 c. moist shredded coconut
  • Beat egg whites and salt till soft peaks form.
  • Gradually add sugar beating until stiff peaks form.
  • Fold in vanilla and coconut.
  • Drop from teaspoon 2 inches apart on cookie sheet covered with paper.
  • Bake in 325 F. oven for 20 minutes.
  • Cool slightly before removing from pan.
  • Makes 2 1/2 dozen.
  • Almond Coconut Squares
  • 6 tbsp shortening
  • 1/2 c. sugar
  • 1 egg
1 tsp. vanilla
  • 1/2 c. moist coconut
  • 1 c. flour
  • 1/4 tsp. salt
  • 1 tsp baking powder
  • 1/4 c. slivered almonds
  • Thoroughly cream shortening and sugar; add egg and beat well.
  • Add vanilla and coconut.
  • Mix (sift) together all dry ingredients.
  • Add to creamed mixture; beat well.
  • Add nuts.
  • Spread in greased 13" x 9 1/2" x 2" pan. Bake in 350 F. oven for 20 minutes.
  • Cut into squares and remove from pan while still warm. Makes 2 dozen squares.
