Ingredients
- 2 Tbs. Butter
- 3 1/2 cups fresh corn
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 cup finely chopped yellow or red onion
- 1/4 cup chopped green onion including white part
- 1/2 cup finely chopped red pepper
- 1/2 cup chopped Ortega Chilies
- 2 tsp minced garlic
- 1 cup mayo
- 8 oz. jack cheese, shredded
- 1/4 tsp cayenne

Preparation
Step 1
Melt 1 tbs butter in large heavy skillet med-high heat.
Add the corn, salt and pepper and cook until deep golden brown. Transfer to bowl and let cool. Melt remaining butter in skillet and add, onions, garlic, peppers and chilies, stir often until veggies are soft ad all the liquid is gone. Add to corn and let cool.
Then mix corn mixture with the cheese, mayo and cayenne. Transfer to baking dish and top with a small amount of shredded jack.
Bake at 350 for 12 to 15 minutes. Serve with tortilla chips.
