Beef Tagine

Ingredients
- 1 kg lean braising steak, cubed
- 1 onion, chopped
- 2 garlic cloves, minced
- 2-3 tbsp ginger, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp harissa paste (or a pinch of chilli powder)
- 650 ml beef stock
- 1/2 cup or 12 dried prunes, chopped
- 2 tbsp chopped parsley

Preparation
Step 1
Put the beef in a dutch oven, Stir in onion, garlic, ginger, cumin, cinnamon and harissa paste. Season with salt and pepper. Pour over the stock and bring to the boil. Cover with a lid, reduce the heat and gently simmer for 1.5 hours or until meat is very tender.
Add prunes and tomato to the tagine and simmer uncovered for another 30 minutes until the sauce has thickened.
Stir in the parsley and serve with couscous.
