Eggs and Crisp Bacon Tacos

Ingredients

  • 4 slices Butterball® Turkey Bacon
  • 2 large eggs, slightly beaten
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tbsp. 2% milk
  • 1 tsp. melted butter
  • 1/8 tsp. ground black pepper
  • 4 (6-inch) flour tortillas
  • 1/4 cup pico de gallo OR salsa

Step 1

Add a bit of Mexican flair to your breakfast with Butterball Turkey Bacon scrambled with eggs and cheese. Serve in flour tortillas, topped wit pico de gallo or salsa.

1. Cook turkey bacon according to package directions. Drain, crumble.

2. Combine eggs, turkey bacon, cheese, milk, butter and pepper in a microwavable bowl.

3. Microwave egg mixture on HIGH 45 seconds or until eggs are almost set. Remove from microwave.

4. Divide egg mixture evenly between 4 tortillas. Drizzle each with pico de gallo. Fold tortillas in half. Place 2 tacos on each plate to serve.
