Ingredients
- 4 eggs
- 1/2 red onion, 1/2 thinly sliced and 1/2 chopped
- 8oz pkg sliced mushrooms
- 6oz bag baby spinach
- 1 1/2 tbsp mustard seeds
- 6 tbsp olive oil
- 2 1/2 tbsp sugar
- 1 1/2 tbsp cider vinegar
- salt and pepper
- 1 lb boneless smoked ham steak, patted dry

Step 1
Boil eggs, chop, transfer to bowl with sliced onion, mushrooms and spinach. In small skillet, toast mustard seeds until they pop, 3 min. Reserve half in a bowl, then add rest to blender with chopped onion, 5 tbsp oil, sugar, vinegar, salt and pepper, blend until smooth.
