  • 1 bunch beets, peeled and cooked
  • 1.4 c. Chopped walnuts
  • 1 1/2 tbsp. Sherry vinegar, or 3 tbsp. Balsamic vinegar boiled down to 1 1/2 tbsp.
  • 3 tbsp. Olive oil
  • 1 tbsp. Fresh parsley, minced
  • Salt and pepper to taste
