Ingredients

  • CARDAMOM BUTTER:
  • 2 cups Flour
  • 1 cup Sugar
  • 1 tsp Baking soda
  • 1 tsp Cardamom
  • ½-1 tsp Ground cloves
  • ½ cup Dried cherries or cranberries
  • ½ cup Chopped walnuts
  • 1 cup Buttermilk
  • 1 Egg
  • ½ cup Melted butter
  • ½ cup Melted butter
  • ¼ cup Sugar
  • 1 tsp Cardamom

Preparation

Step 1

Pre-heat oven to 400 Deg. In a small bowl, combine the flour, sugar & baking soda. In a 1 quart glass container, layer the flour mixture, cardamom, cloves, cherries & walnuts, packing well between each layer. Cover & store in cool dry place for up to 6 months. YIELD: 1 batch (about 4 cups). TO PREPARE MUFFINS: place mix in a large bowl. Combine the buttermilk, egg & butter; stir into mix just until moistened. Fill greased paper-lined muffin cups ¾ full. Bake at 400 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to wire racks. In a small mixing bowl, cream the butter, sugar & cardamom until smooth. Store in an airtight container in the refrigerator. Soften just before serving with the muffins. YIELD: 14 muffins (3/4 cup batter).
