  • 6 Tbsp margarine
  • 6 Tbsp flour
  • 2 cups milk
  • 6 large eggs, separated
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups finely chopped broccoli, cooked and well drained

Preparation

Step 1

Melt margarine, whisk in flour. Add milk and cook until thick and bubbly. Remove from heat. Gradually and vigorously stir into slightly beaten egg yolks. Mix in salt, pepper, and broccoli.
Beat egg whites until peaked and fold in. Turn into an ungreased souffle dish. Bake at 325 degrees for 45 minutes.
