Four Cheese Macaroni with Ham

Ingredients

  • 1 jar (15 oz.) Alfredo sauce
  • 1 1/4 cups shredded American Cheese
  • 1 1/4 cups shredded Cheddar Cheese
  • 3/4 cup shredded Monterey Jack cheese
  • 5 tbls. shredded Parmesan cheese
  • 1/2 tsp. country-style Dijon mustard
  • 1 pkg. (16 oz.) cavatappi pasta or elbow twists, cooked and drained
  • 8 oz. chunk ham, preferably Black Forest, cut into 1" X 1/2" cubes, 2 cups.
  • 3 scallions, sliced
  • 34 Ritz crackers, crushed, 1 1/2 cups
  • 2 tbsp. butter melted
  • 1 tbsp. chopped fresh parsley

Preheat oven to 375 deg. Coat shallow 3 qt. baking dish with cooking spray. In large pot, combine Alfredo sauce, American cheese, 1 cup Cheddar cheeese, 1 cup water, 1/2 cup Jack cheese, 3 tbsp Parmesan and mustard. Over medium heat, cook, stirrring until heated and smooth.

Stir in pasta, ham and scallions, transfer mixture to baking dish. In small bowl, mix crackers with remaining Cheddar cheesem, Jack cheese and parmesan cheese. Stir in butter and parsley until crumbs are coated; sprinkle over pasta. Bake until lightly browned and bubbly, about 20 minutes. Cool 10 minutes before serving.
