Baked Apple Pudding and Rum Sauce

This recipe so reminds me of Mom.....so glad I found it!!
This is actually like a moist apple cake. Use a greased and floured 8x8 pan for the cake. This dessert serves 4-6 people. You can double and use a 9x13 pan.
Ingredients
- "Apple Pudding"
- 1 cup flour sifted
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/4 tsp. salt
- 1/4 cup butter softened
- 1 cup sugar
- 1 egg (unbeatned)
- 2 large apples: washed and unpared
- "Rum Sauce"
- 1/2 cup butter
- 1 cup sugar
- 1/2 cup light cream
- 1 tsp. vanilla
- 2-3 Tbsp. rum

Preparation
Step 1
Preheat oven to 400 degrees
Grease 8x8x2" pan
Sift together flour, baking soda, spices and salt.
Grate peeled apples medium fine( should equal 2 cups)
Mix butter and sugar until light and fluffy; add egg and mix well. Add apples to sugar and butter. Low speed, add flour mixture and mix until just mixed.
Pour into prepared pan and bake for 20-30 minutes; tester should come out clean with no batter. Cool in pan.
RUM SAUCE: Makes 1 1/2 cups
In double boiler, mix butter, sugar, and light cream. Cook, stirring for about 10-15 minutes or until sauce is slightly thickened. Refrigerate until time to serve. About 15 minutes before serving, add spices, vanilla, and rum. Stir well, and reheat slowly in double boiler.
Serve warm over cake.
