Rum and Raisin Cake

Ingredients

  • 1 1/4 cups raisins
  • 1/4 cup dark rum
  • 1 1/2 cups self-rising flour
  • 2/3 cups unsalted butter, chopped
  • 3/4 cup light brown sugar
  • 3 eggs, lightly beaten

Step 1

1. Preheat the oven to 350 degrees F. Grease a deep, 8 inch round cake pan and line the bottom with waxed paper. Soak the raisins and rum in a small bowl for 10 minutes. Sift the flour into a large bowl and make a well in the center.
2. Melt the butter and sugar in a small saucepan over low heat, stirring until the sugar has dissolved. Remove from the heat. Combine with the rum and raisin mixture and add to the flour with the egg. Stir with a wooden spoon until combine. Do Not Overbeat!!! Spoon the mixture into the prepared pan and smooth the surface.
3. Bake for 40 minutes or until a skewer comes out clean when inserted into the center of the cake.

This cake is delicious served warm with ice cream!!!!
