Spinach Tart

Ingredients

  • 9 " tart pan line with pie dough
  • 9 oz. baby spinach
  • 4 Tbsp. butter
  • 1 onion, finely chopped
  • 2 heaping c. grated cheddar cheese
  • 2 whole eggs plus 2 yolks
  • 2/3 c. heavy cream
  • 1 tsp. Dijon mustard
  • Salt and freshly ground black pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees.

Place dough-lined tart pan in the oven and bake the crust for 10-15 minutes.

Gently cook spinach in 2 Tbsp, butter until wilted. Drain; finely chop.

Heat remaining 2 Tbsp. butter and cook onion until soft.

Spread spinach and onion over bottom of partially cooked crust.

In a food processor, pulse cheese, eggs, yolks, cream, mustard, salt and pepper. Pour over spinach and onion. Return to oven and bake @ 400 degrees for 20-25 minutes or until top is golden. Turn off heat; leave tart in oven for 5 minutes. Serve.
