Ingredients

  • 2-3 Pounds boneless pork
  • 1/4 cup brown sugar
  • 1 can Coke/Pepsi/ Dr Pepper
  • 1 Cup Brown Sugar
  • 1 TBSP Chili Powder
  • Garlic Powder - just enough to cover top of roast
  • Dry Mustard - " """"" """""""
  • Salt and Pepper
  • 1 cup Salsa (finely chopped works best)
  • 1 can Coke/Pepsi/Dr Pepper
  • 1 can drained green chilies

Preparation

Step 1

Place pork, brown sugar and pop in a plastic bag and place in the fridge overnight. (Can do for 2-3 hours if you run out of time.)

Drain fluids off of pork after marinating. Place pork in crock pop and cover with remaining ingredients. If doubling season each 2-3 pound section with seasonings and layer.

Cook in crockpot 4-6 hours on high or 8-12 hours on low. Lengthen time if cooking additional meat.

When meat is tender and falls apart - place in Kitchen Aid mixer and mix with paddle (do not use wisk) on low for 2-3 minutes until pork is shredded to your liking.

Add additional chili powder and brown sugar to taste. Return to crock pot with remaining juice and continue cooking for 1 hour on low.



Serve with Rice, beans and cilantro sauce
