Tasty Tuscan Pork

Ingredients
- 2 tbsp olive oil
- 1 tbsp each finely chopped fresh oregano, sage and rosemary
- 2 cloves garlic, peeled and finely chopped
- 1/8 tsp red pepper flakes
- 1 bone-in pork loin roast (about 5 lbs)

Step 1
1.) Heat oven to 450 degrees F. In small bowl, combine olive oil, oregano, sage, rosemary, garlic and red pepper flakes; stir until blended. Season with 1 tsp salt, if desired.
2.) Rub herb-garlic mixture evenly over entire surface of pork loin. Place pork loin bone side down in roasting pan. Roast 10 minutes.
3.) Reduce oven temperature to 300 degrees F 1 1/2 hrs., or until thermometer inserted in meat, not touching bone, reads 165degrees F. Let sit 10 minutes before slicing.
