Ingredients

  • 1/2 cup plus 1 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 6 large eggs, separated
  • 1 cup sugar, divided
  • 1/2 cup plus 1 Tbsp. milk
  • 1 tsp. vanilla
  • 1/4 cup lemon juice
  • 3 cups pared and diced apples
  • 4 Tbsp. butter
  • 1 tsp. cinnamon

Preparation

Step 1

Peel and dice apples. Sprinkle lemon juice on apples; stir.

In a large bowl, sift together flour, baking powder and salt; set aside.

In another bowl, beat egg whites until foamy; gradually add 3/4 cup of sugar and continue beating until mixture forms stiff peaks; set aside.

In a small bowl, beat egg yolks until thickened; beat in milk and vanilla. Combine milk mixture with reserved flour mixture; beating until smooth.

Fold reserved egg white mixture and apple mixture into flour-milk batter until well combined.

In a large 12 or 14 inch skillet, melt butter. Pour in pancake mixture and sprinkle with remaining quarter cup sugar and cinnamon.

Bake at 375°F 15 to 20 minutes.
