Ingredients

  • 2 Lbs Boneless pork loin cut in half
  • 1-2 thin sliced red pepper
  • 2 cloves chopped garlic
  • 1/4 c Teriyaki sauce
  • 2 T Rice vinegar
  • 1 t crushed red pepper
  • 1/4 C peanut butter
  • 1/2 C Green onions
  • 2 T cilantro
  • 2 T chopped dry roast peanuts
  • 8 lime wedges
  • 6 C cooked basmati rice

Preparation

Step 1

Place first 5 ingredients in crock pot and cook on low for 5-6 hours.

Remove pork and shred. Add PB to liquid in crock and stir well then add pork and peppers.

Serve on rice beds topped w/green onions, cilantro, peanuts and a squeeze of lime juice.
