Ingredients
- 2 Lbs Boneless pork loin cut in half
- 1-2 thin sliced red pepper
- 2 cloves chopped garlic
- 1/4 c Teriyaki sauce
- 2 T Rice vinegar
- 1 t crushed red pepper
- 1/4 C peanut butter
- 1/2 C Green onions
- 2 T cilantro
- 2 T chopped dry roast peanuts
- 8 lime wedges
- 6 C cooked basmati rice

Preparation
Step 1
Place first 5 ingredients in crock pot and cook on low for 5-6 hours.
Remove pork and shred. Add PB to liquid in crock and stir well then add pork and peppers.
Serve on rice beds topped w/green onions, cilantro, peanuts and a squeeze of lime juice.
