Rhubarb Strawberry Cheesecake
This perfect treat features a creamy and rich cheesecake filling with strawberries and rhubarb in a yummy oatmeal crust. Enjoy!
- 1 1/4 flour
- 1/2 cup old fashioned oat meal, uncooked
- 1/2 cup brown sugar
- 1/3 cup cold butter cubed
- 1 (8-ounce) box cream cheese softened by leaving out
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 egg lightly beaten
- 1/2 teaspoon vanilla
- 1 1/2 cup fresh rhubarb, cut up
- 1/2 cup strawberries, cut up
Preparation time 15mins
Cooking time 55mins
Preheat oven 350°F.
In small bowl mix flour, oats. and brown sugar cut in butter until crumbly.
Reserve 1 cup mixture for topping. Press remaining in a 9x9-inch baking pan I like a glass dish.
Put in oven for 5 minutes.
Filling: Beat cream cheese, sugar, salt and spices until smooth. Add egg and vanilla beat at low speed or by hand until blended. Add rhubarb and strawberries. Spread filling over crust Sprinkle topping over top.
Bake until golden brown about 40 minutes. Cool 1 hour before cutting into squares.
