Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 1/2 c uncooked quick cooking barley
  • 1 large can tomato juice
  • 1 c water
  • 2 - 3 t chili powder
  • 1 1/2 t salt
  • 1/2 t pepper
  • 1 stalk celery, chopped
  • 1 carrot chopped

Preparation

Step 1

Cook beef and onion in dutch oven over medium heat 8 - 10 minutes. Drain. Stir in remaining ingredients except barley. Heat to boiling; reduce heat. Last 15 minutes add barley. Cook until barley is tender.
