Ingredients

  • 3 large eggs
  • 2 cups AP Flour
  • 2 cups Italian Style bread crumbs
  • 24 small ravioli
  • Canola oil for frying
  • 1/2 tsp salt
  • 1/2 tsp coarsely ground pepper
  • 1/4 cup freshly grated Parmigiano-Reggiano
  • 2 cups Marinara Sauce

Step 1

1. Put the eggs, flour and brad crumbs in three separate shallow bowls. Beat the eggs. Working in batches, dip each ravioli in the egg to coat completely. Allow the excess egg to drip back into the bowl. Dredge the ravioli in the flour and then dredge in bread crumbs. Place on large plate while finishing the rest of the raviolis.

2. Clip a deep fryer thermometer to the side of a heavy deep pot. Add 3 inches of canola oil to pot and slowly heat the oil to 325 degrees. Using a slotted spoon, add 4-5 ravioli to the hot oil and fry until golden brown, about 3 minutes, turning them halfway through cooking. (cook the ravioli in small batches or the oil won't stay hot) Using tongs remove the raviolis to a wire rack or paper towel. Continue until all raviolis are cooked.

3. Sprinkle the hot ravioli with salt, pepper, and cheese. Serve with Marinara sauce for dipping.
