Macaroons are a bit crispy but have a delicious sweet flavor! These cookies are east to make and great for any occasion.
- 1 cup cream of coconut
- 2 tablespoons light corn syrup
- 4 each egg whites
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 8 ounce unsweetened shredded dried coconut
- 8 ounce sweetened flaked coconut

Whisk together cream of coconut, corn syrup, egg whites, vanilla and salt in a small bowl.
Combine unsweetened and sweetened coconut in a large bowl. Toss together to break up any clumps.
Pour liquid over coconut and mix with spatula until evenly moistened. Chill for 15 minutes.
Preheat oven to 375°Fahrenheit. Line a full sheet pan with parchment paper.
