Spicy Grilled Shrimp

Ingredients
- sauce:
- 1/2 cup sugar
- 1 tsp grated lime zest
- 1/4 cup fresh lime juice
- 1 tbsp asian chili paste
- 1 tbsp asian fish sauce
- salt
- shrimp:
- veg oil
- 36 large shrimp, peeled and deveined
- salt

Preparation
Step 1
Soak 12 wooden skewers in water for 30 minutes. Make sauce: bring sugar and lime juice to a simmer in a small pan. Cook, stirring, until dissolved, 2 minutes. Remove from heat, stir in zest, chili pasta and fish sauce. Season with salt.
Make shrimp:
Heat grill to high. Thread 3 shrimp onto each skewer, season with salt. Brush oil on grill. Divide sauce in half, reserve one half.
Grill shrimp for 1 minute, brush with sauce. flip and grill 1 more minute, brush with more sauce. Flip and grill more, 1-3 minutes, brushing with more sauce. Serve with reserved sauce.
