Ingredients
- 1 Lb Salmon Skinned and cut into 1 inch cubes
- 1 T cumin
- 1 t chili powder
- 2 T EVOO
- 1 Medium Yellow Onion Chopped
- 2 Limes juiced
- 16 Oz home made salza or 2 8 oz cans Rotel
- 1/2 bunch Cilantro Chopped
- 1 Bunch Green Onions Chopped
- 2 cans Black Refried Beans
- Spanish Rice
- Shredded monteray jack cheese
- Sour Cream
- Hot Sauce

Preparation
Step 1
Toss Salmon in Cumin and Chili Powder and set aside
Preferred to use Home made Salsa, but if not available use Rotel or Pace medium
Saute onion in EVOO over medium heat until soft. Turn up heat to Medium High and add Salmon and cook until the outside is firm. Add Rotel or fresh salsa and continue to cook over medium heat. In the meantime heat black refrieed beans, and cook spanish rice per instructions.
Continue to stir fish and warm tortillias. Serve with fresh Salsa, black beans, guacamole, monteray cheese, hot sauce and enjoy
