Swiss Apple Breakfast Loaf

Ingredients
- 3 tablespoons butter
- 2 cups peeled diced apple
- 1 teaspoon cinnamon
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 3/4 cup rolled oats
- 1/3 cup wheat bran
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 2 cups diced Canadian Swiss Cheese
- 1/2 cup butter
- 3 eggs
- 2 cups milk
- 1 teaspoon vanilla

Preparation
Step 1
Preheat oven to 375. Butter and flour 2 loaf pans.
Over medium heat, melt 3 T butter. Add apples and cook. Sprinkle with cinnamon and let cool.
In large bowl, combine dry ingredients with cheese and make a well in the center.
In separate bowl, cream 1/2 cup butter with brown sugar. Beat in eggs one at a time. Gradually add the milk, vanilla and apples.
Pour liquid ingredients into dry ingredients and stir with a wooden spoon until combined. Avoid over-mixing. Spread into prepared pans. Bake in center of oven for 1 hour or until done. Serve warm with fresh fruit. Good toasted.
