Turkey in the Straw

This is essentially a meat sauce, using ground turkey. Much, much leaner than traditional meat sauces. To double the recipe, follow the numbers in the parentheses.

Ingredients
- 8 (16) oz lean ground turkey
- 1/2 (1) cup chopped onions
- 1/2 (1) cup diced green peppers
- 1 (2) clove garlic, crushed
- 1 cup (16oz) canned tomatoes, with juice
- 1/2 (1) tsp dried basil
- 1/2 (1) tsp dried oregano
- 1/2 (1) tsp fennel seeds
- 1/8 (1/4) tsp salt
- Pinch (1/8) tsp pepper

Preparation
Step 1
In a heavy, 10” non-stick skillet over medium heat, saute the turkey, onions, and green peppers for 5 minutes, or until the turkey is crumbly and the vegetables are tender but not brown. Stir in the garlic, tomatoes with juice, basil, oregano, fennel seeds, salt and pepper.
Bring the sauce to a simmer, cover, and reduce the heat. Cook over low heat for 30 minutes, or until most of the liquid has evaporated. Serve over pasta.
