Ingredients

  • 1 1/2 cups oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 salt
  • 2 tsp vanilla
  • 1/2 cup chopped walnuts
  • 3 cups grated raw carrots
  • Cream Cheese Frosting
  • 1 stick margarine, softened
  • 1 pound powdered sugar
  • 6 ounces cream cheese, softened

Preparation

Step 1

Combine oil, sugar, eggs, flour, baking powder, baking soda, cinnamon and salt. Beat two minutes. Fold in grated carrots, nuts and vanilla. Put in greased and floured layer cake pans which have been lined with wax paper. Bake in preheated 350 oven for one hour. Cool on cake racks 20 minutes. Remove waxed paper. When cool ice with cream cheese frosting.
