Turkey Stir-Fry with Cashews

Ingredients
- 1 pound boneless skinless turkey breast
- 1 tablespoon cornstarch
- 2 tablespoons soy sauce
- 2 teaspoons vegetable oil
- 2 cloves garlic, minced
- 1 medium onion, sliced
- 2 small carrots, sliced thin
- 1 1/2 cups diced celery
- 1 1/2 cups snow peas
- 3/4 cup turkey or chicken stock
- 1/4 cup oyster sauce
- 1 teaspoon cornstarch
- 3/4 cup roasted cashew pieces
- 1/4 teaspoon fresh ground pepper

Step 1
Cut turkey into small, thin, bit-size pieces. Mix 1 T cornstarch and soy sauce with turkey in a large bowl. Blend well to coat all pieces.
Heat oil in a large non-stick fry pan over medium-high heat. Add turkey and stir-fry 3 - 5 minutes just until turkey is no longer pink inside. Remove turkey form pan and set aside.
Add garlic, onion and carrot. Stir fry 2-3 minutes until onion softens. Add celery and snow peas and cook stirring constantly for 3-4 minutes. Meanwhile, mix remaining 1 teaspoon cornstarch with broth and oyster sauce. Add to vegetables, mixing well.
Return turkey to fry pan stirring until mixture thickens and bubbles. Transfer to a serving dish and top with cashew and pepper.
