Beef Chow Mein

Ingredients
- 1 lb egg noodles
- 4 T peanut oil
- 1 lb lean beef steak, cut into thin strips
- 2 garlic cloves, crushed
- 1 tsp grated fresh ginger
- 1 green bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 2 celery stalks, sliced
- 8 scallions
- 1 tsp dark brown sugar
- 1 T dry sherry
- 2 T dark soy sauce
- few drops chili sauce

Preparation
Step 1
Cook noodles. Drain well, rinse under cold running water. Drain and toss in 1 T peanut oil.
Heat remaining oil in preheated wok. Add teh beef and stir-fry for 3 - 4 minutes, stirring constantly.
Add the crushed garlic and grated fresh ginger to wok and fry 30 seconds.Add bell pepper, carrot, celery, and scallions and stir-fry 2 minutes.
Add sugar, sherry, soy sauce, chili sauce and cook, stirring, 1 minute.
Stir in the noodles, mixing well, and cook until completely warmed through.
