Ingredients

  • 1

    lb. ground turkey

  • 1

    c. barley

  • 1

    yellow onion, chopped

  • 2-3

    cans chicken broth

  • 1

    can Hunt's tomato sauce

  • 1

    can black beans

  • 1/2

    tbsp. minced garlic

  • Creole seasoning

  • Curry powder

  • Chili powder

Directions

Brown turkey in large pot until no longer pink. Add garlic and onion and cook on medium heat until onions are tender. Add 2 cans of chicken broth and barley and bring to a boil. Reduce heat to low, add black beans and tomato sauce. Season to your liking (we like 1-2 tsp. of each). Simmer for a half hour, adding more chicken broth, if necessary, to achieve your desired consistency. Sprinkle with cheese and/or top with a dollop of sour cream if desired.
