Ingredients

  • 2 tablespoons olive oil
  • 2 pounds onion
  • 1/4 teaspoon salt
  • fresh ground pepper
  • 1/2 cup sherry
  • 8 cups fat free low sodium beef broth
  • 4 beef bouillon cubes
  • 1/2 teaspoon thyme
  • 1 baguette
  • 1 clove garlic cut in half
  • muenster cheese

Preparation

Step 1

Heat oil and add onion. Cook until dark golden brown (about 30 minutes). Add salt, pepper, and sherry. Bring to a boil until liquid is reduced by half. Add broth, bouillon and thyme. Simmer until onion is very soft (about 30 minutes). Rub garlic halves over the outside of the baguette. Bake at 400 until browned. Cube. Pour into ramekins, add baguette cubes, and sprinkle top with cheese. Broil until cheese is melted and browning.
