Creamy Baked Scallops

Ingredients

  • 24 sea scallops
  • 1 cup fish, chicken or vegetable stock
  • 1 cup dry white wine
  • 1/4 cup butter
  • 4 medium scallions, chopped
  • 1 slice bacon, finely chopped
  • 1 cup thinly sliced white mushrooms
  • 1/4 cup all purpose flour
  • 3/4 cup whipping cream
  • 1 teaspoon lemon juice
  • 1 cup fresh breadcrumbs
  • 2 Tbls. melted butter, extra

Step 1

Cut scallops in half. Heat stock and wine in a saucepan and add scallops. Cover and simmer over medium heat for 2-3 minutes or until scallops are opaque and tender. Remove scallops with a slotted spoon: cover and set aside. Bring liquid in pan to a boil and reduce to 1 1/2 cups remain.

Melt the butter in a saucepan and add the scallops, bacon and mushrooms. Cook over medium heat for 3 minutes, stirring occasionally, until scallops are soft but not brown.

Combine breadcrumbs and extra butter in a small bowl. Preheat broiler to high. Spoon warm sauce over scallops and sprinkle with breadcrumb mixture. Place under broiler until breadcrumbs are golden brown. Be careful here as the breadcrumbs WILL burn. My brother's actually caught on fire. OOOPS!
