Greek Chicken with Orzo

This was a variation on a lamb recipe and is very good with chicken. Instead of orzo, it can also be served with couscous (made with chickpeas and parsley). Particularly nice with cubed feta on top.

Ingredients
- 4 chicken breasts, boneless and skinless, chopped into pieces
- 1 19-oz can cannellini (white kidney) beans, drained and rinsed
- 1 14-oz can diced tomatoes
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1 14-oz can artichoke hearts, drained and quartered
- 3 cups fresh baby spinach
- 3 cups hot cooked orzo
- Crumbled feta cheese (optional)

Preparation
Step 1
Place chicken in slow cooker with beans, tomatoes, garlic, salt and oregano. Cover and cook on low 6-8 hours or high 3-4 hours. Stir in artichoke hearts and spinach. Serve over cooked orzo and sprinkle with feta cheese (optional).
This also can be made in a dutch oven or large pan on the hob.
