Ingredients
- 3 leeks, white and light green parts
- 1 tablespoon butter
- 1 1/2 teaspoon minced garlic
- 1/2 teaspoon thyme
- 1/4 teaspoon each salt and pepper
- 1/2 cup flour
- 4 cups chicken stock
- 1 large potatoe diced
- 1 cup milk

Preparation
Step 1
1. Cut leeks lengthwise in half. Slice crosswise and place in sieve. Rinse in cold water to remove dirt.
2. In large saucepan melt butter. Fry leeks, garlic, thyme, sale & pepper until softened about 4 minutes.
3. Sprinkle with flour, cook, stirring for about 1 minute.
4. Gradually stir in stock and 1 cup water. Add potatoe and bring to a boil. Reduce heat, cover and simmer for 15 minuts until potatoe is softened.
5. Stir in milk
6. Puree soup until smooth
