Ingredients

  • 1 (1.25 pounds) bunch fresh broccoli
  • 4 green onions, sliced
  • 3 hard cooked eggs, chopped
  • 2 medium carrots, grated
  • 1/2 cup reduced fat mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salad seasoning
  • 1/2 teaspoon pepper

Preparation

Step 1

Trim off large leaves of broccoli.Remove tough ends of lower stalks and wash thoroughly. Chop coarsely. Add onion, eggs and carrots to broccoli and toss.
Combine remaining ingredients in small bowl. Pour over broccoli mixture and toss gently. Cover and refrigerate overnight.
Will keep well in refrierator for 3-4 days.
