ITALIAN PLUM CAKE

My Mom got this recipe from an Italian lady who worked with her at Jewel. Every summer when prune plums are in season, I look forward to making this wonderful cake. A food processor makes mixing the batter much easier and also aerates the batter to make it less dense.

Ingredients
- 1 Cup sugar
- 1 Cup vegetable oil
- 4 Eggs, beaten
- 2 Cups flour, sifted
- 1 Tsp. baking powder
- 1 Tsp. vanilla
- 12-15 Prune plums, seeded and halved.
- 1/2 Cup sugar, mixed with 1/4 tsp. cinnamon.

Preparation
Step 1
Oven to 375 degrees
Grease and flour 9x13” metal cake pan
Mix sugar, oil, eggs, flour, baking powder and vanilla in processor (or hand mixer). Spread a little less than half the batter in pan. Roll plum halves in sugar/cinnamon mixture and place cut side up on batter. Pour balance of batter over plums.
Bake 45-50 minutes until golden.
When cool, sprinkle with powdered sugar.
