Sea Bass with Mango Salsa

Ingredients

  • 2 tsp unsalted butter
  • 1/4 cup lime juice
  • 1/8 tsp cayenne
  • 1/2 tsp salt to taste (optional)
  • 1 lb sea bass fillets, or red snapper fillets
  • 1 tbsp cilantro, or parsley, chopped
  • 1/2 lb mango, sliced and chopped
  • 1 tbsp olive oil
  • 2 tbsp all purpose flour

Preparation

Step 1

Season fish with salt and pepper to taste. Dust lightly with flour, shaking off excess. Heat oil in a heavy nonstick skillet over medium high heat. Saut�ish 3-5 minutes per side, until golden brown on the outside and opaque throughout. Transfer to a platter. Melt butter in same skillet. Stir in mango, lime juice, and cayenne and cook about 1 minute, stirring constantly until heated throughout. Serve fish with salsa spooned over top and sprinkled with cilantro.
