Sea Bass with Mango Salsa

Ingredients
- 2 tsp unsalted butter
- 1/4 cup lime juice
- 1/8 tsp cayenne
- 1/2 tsp salt to taste (optional)
- 1 lb sea bass fillets, or red snapper fillets
- 1 tbsp cilantro, or parsley, chopped
- 1/2 lb mango, sliced and chopped
- 1 tbsp olive oil
- 2 tbsp all purpose flour

Preparation
Step 1
Season fish with salt and pepper to taste. Dust lightly with flour, shaking off excess. Heat oil in a heavy nonstick skillet over medium high heat. Saut�ish 3-5 minutes per side, until golden brown on the outside and opaque throughout. Transfer to a platter. Melt butter in same skillet. Stir in mango, lime juice, and cayenne and cook about 1 minute, stirring constantly until heated throughout. Serve fish with salsa spooned over top and sprinkled with cilantro.
