Ingredients

  • 6 oz pasta (egg noodles)
  • 3 tbsp butter
  • 1 lb medium shrimp, peeled
  • 1 1/2 tsp curry powder
  • 1/4 cup dry white wine
  • 3/4 cup chicken broth
  • 2 eggs
  • 2 tbsp Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 tbsp chopped mint

Step 1

Cook pasta and drain.

In a large nonstick skillet, melt the butter, cook shrimp and curry powder until shrimp turn opaque, 2-3 minutes. Add wine, bring to a boil and add broth.

In a small bowl, beat eggs and cheese; Gradually whisk 1/2 cup of the hot broth into the egg mixture. Pour the egg mixture into the skillet whisking constantly. Reduce the heat and stir in the pasta. Cook, stirring until the sauce thickens and the pasta is heated through, 2-3 minutes. Remove from the heat and sprinkle with the mint, salt and pepper. Toss to combine.
