Beef Stew

This beef stew has great flavour and is prepared in a fraction of the time by using a pressure cooker.

Ingredients
- 14.5 ounce can diced tomatoes
- 1 cup beef broth
- 1 tsp. chili powder
- 1/2 tsp. ground allspice
- 1/2 tsp. salt
- 1 large onion chopped
- 1 lb. boneless beef round, cut into 1 inch cubes
- 8 small red potatoes
- 4 medium carrots, cut into chunks
- 2 ribs of celery, chopped

Preparation
Step 1
1. In the base of a pressure cooker, combine tomatoes and their juice, beef broth, chili powder, allspice and salt. Add the beef, potatoes, carrots, celery and onion, and stir to combine.
2. Seal the pot with the lid and bring the pot to full pressure by turning the heat to high. Once the pot starts steaming, reduce the heat to medium and cook for 15 minutes.
3. Release the steam and serve the stew immediately with a baguette.
