Sambuca Shrimp

Ingredients
- 2 tbsp olive oil
- 1 leek julienned (white part only)
- 1 tbsp mixed peppercorns (whole)
- 1 bag large raw shrimp (about 25) peeled and deveined with tail intact
- 1 1/2 c cream
- 3 oz. sambuca
- 1/2 c diced and seeded tomatoes

Preparation
Step 1
In large frying pan, saute leek, peppercorns and shrimp until shrimp are just opaque. Remove shrimp with slotted spoon and set aside. Stir in cream and sambuca. Cook, stirring often until reduced by one third. Stir in shrimp and tomatoes stirring gently until heated through.
Serve with French bread grilled.
