Grilled Salmon with Crispy Mustard-Bread Crumb Crust

Ingredients
- 3 Tbsp Dijon Mustard
- 2 Tbsp vinegar (white wine,cider or rice)
- 1 tsp honey
- Juice of half a lime (save other half for garnish)
- 1 tsp vegetable or olive oil, plus more for oiling the pan, drizzling on top of salmon
- 4 salmon fillets or steaks
- 1/2 cup bread crumbs
- Salt and pepper
- Fresh parsley

Preparation
Step 1
1. Arrange oven rack 6 inches below the broiler.
2. In a small bowl, mix together the mustard, vinegar, honey, lime juice and teaspoon of oil. Whisk with a fork until smooth.
3. Spread a thin film of oil on a shallow pan, lay salmon skin side down. Spread each filet thinly with mustard sauce. Broil for about 5 min.
4. Chop parsley, mix with bread crumbs. Remove fish from heat and spread another layer of mustard sauce over each filet, then press bread crumb mixture on top. Sprinkle salt and pepper, drizzle a little oil over each filet.
5. Return fish to broiler and broil for another 5 minutes if fish is 1 inch think, longer if fish is thicker. Fish is done when crumbs are brown and fish is opaque.
