  • 3 cups red potatoes, cubed
  • 2 cups carrots, diced
  • 1/2 cup onion, chopped
  • 1/2 cup celery, diced
  • 30 oz. navy or cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon seasoned salt
  • 1 cup lentils
  • 1 1/4 pounds kielbasa sausage, sliced in 1/4-inch cubes
  • 1/2 cup fresh basil

Step 1

3 cups red potatoes, cubed
2 cups carrots, diced
1/2 cup onion, chopped
1/2 cup celery, diced
30 oz. navy or cannellini beans, drained and rinsed
4 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon seasoned salt
1 cup lentils
1 1/4 pounds kielbasa sausage, sliced in 1/4-inch cubes
1/2 cup fresh basil
PREPARATION

Place all ingredients in slow cooker except sausage and basil leaves, and stir to combine.
Cover and let it simmer on low for 8-9 hours. Reduce cooking time to 4-5 hours if cooking on high.
After 8 hours, remove lid and add kielbasa. Cook soup for an additional 30 minutes before dishing it into single serving bowls and garnishing liberally with basil.
