Ingredients
- eggplant
- egg
- red pepper
- black pepper
- cracker crumbs
- salt
- 1 pint tomatoes
- 1 can tomato paste (with 3 cans water)
- oregano
- grated romano cheese
- 1 tablespoon sugar
- parmesan or mozzarella cheese

Preparation
Step 1
Dip eggplant into egg and cracker crumbs. Fry in oil in bottom of pan. Mix red pepper, black pepper, salt, tomatoes, paste, water, sugar and oregano for sauce. Cover bottom of pan with oil. Layer eggplant, cheese and sauce. Bake ½ hour at 350 F.
